Michigan Apple Breakfast Casserole

I’ve been on a serious Michigan apple kick lately, using them in just about every meal prep this week. This time, I made the most delicious apple breakfast casserole and wanted to share the recipe with you. It’s super simple. You can prep it the night before, bake it in the morning for about an hour, and breakfast is ready. Easy and delicious. I’ve included all the details below if you want to try it yourself. What You Need

  • 16 oz roll ground breakfast sausage

  • 10 eggs

  • 2 cups milk

  • 1 tsp vanilla extract

  • 2 large Michigan apples

  • 2 tbsp brown sugar

  • 1 tsp ground cinnamon

  • 6 cups cubed bread

  • 2 cups shredded cheese (I used cheddar)

Let’s Make It

  1. Brown the sausage in a skillet, crumbling as it cooks. Drain well and set aside.

  2. In a large bowl, whisk together the eggs, milk, and vanilla extract until fully combined. In a separate bowl, toss the apples with sugar and cinnamon until evenly coated. Set aside.

  3. Spray a 9x13-inch baking dish with nonstick cooking spray. Layer half of the bread cubes evenly on the bottom, then top with half the sausage, half the apples, and half the cheese. Repeat with the remaining bread, sausage, apples, and cheese.

  4. Pour the egg mixture evenly over the casserole. Cover and refrigerate for 8 hours or overnight.

  5. Bake uncovered at 325°F for 1 hour, or until a toothpick inserted in the center comes out clean.

  6. Slice and serve warm, with maple syrup if desired.
